Cauliflower is an excellent source of dietry fibre, vitamins and minerals. These white vegetables can be eaten in a variety of ways; including raw, cooked and even pickled. Cauliflower is actually most beneficial raw or pickled, in fact, studies show that the nutrients in cauliflower may prevent certain types of cancer. That said, it doesn't mean it isn't simply amazing when cooked into a cauliflower bake or as a flavour absorbing rice substitute.
